Good Weekend! There are many kind of 'Kimchi' style. Today menu is whole radish kimchi a.k.a Chonggak-Kimchi ; Chonggak radish, also called ponytail radish, is a variety of white radish.
It is a small radish with many fine roots; of which the entire plant, including the leaves and stems, is used in Korean cuisine. Whole or half-split young white radishes, with the leaves on, salted and mixed with red chili powder and seasonings.Simple and easy.

※Ingredients(재료)
-Ponytail Radish/총각무 : 2kg
-Coarse Salt/굵은소금 : 100g
-Crushed Ginger/다진생강 : 1tbsp
-Crushed Garlic/다진마늘 : 1tbsp
-Sugar/설탕 : 1/2tbsp
-Plum Liquid/매실액 : 1tbsp
-Salted Shrimp/새우젓 : 2tbsp
-Red pepper Powder/고춧가루 : 6tbsp
-Water/물 : 100mL
-Fish Sauce(anchovy)/멸치액젓 : 2tbsp

1.PONYTAIL RADISH,2KG ; TRIM/PEEL/CUT
ⓐCut and peel,trim dead leaves off ; follow a scene above/
총각무를 자르고 벗기고 다름어 주세요(영상참조)
ⓑDivide ponytail radish in 4 parts/무를 4등분 해주셔요
2.WASH,SALT RADISH,2KG ONLY 1 HOUR
ⓐWash off ponytail radish under the water/
흐르는 물에 손질한 '무'를 깨끗히 씻어줍니다
ⓑA layer of radish sprinkles salt/잘 절여지도록 겹겹히 재료를 놓고 뿌려주세요
ⓒTotal 3 layers ; needed 33g of salt for each layer/
저는 총 3번(33g) 정도를 층층히 뿌려줬어요
ⓓSalting radish only 1 hour/1시간 정도 절여주시면 됩니다.
3.RECIPE KIMCHI SEASONING ; ①crushed garlic②soy sauce③salted shrimp④crushed ginger⑤chili powder⑥sugar⑦plum juice⑧water/
갖은 양념 '다진마늘', '간장' 등을 넣고 김치 양념을 준비해줘요
4.SEASONING & MIX KIMCHI
ⓐAdd salted radish into bowl after wash 1 time/
절인 무를 한 번 씻은 후 큰 대야에 담아 줍니다.
ⓑPour the Kimchi seasoning/미리 만들어 둔 김치양념을 붓구요!
ⓒMix well season to taste/양념이 잘 베이도록 섞어주시면 끝!
